I've gone to cooking school and it's really fun. CIA Is one of America's top culinary schools. All the advice I can give to you is, relax and enjoy. You don't need to know much to start cooking and alll the knive skills and such you'll need, you will learn at the school. If you want a little insight on the CIA .. read "Making of a Chef". It's a good read and well worth the money. I'm saving up myself (after my trip to Japan) to go back to a higher end culinary school and do a few more years
