Yo this is for a game in real life, and a possible npc I will make. You see I plan on playing a undead character and use the ghoul/ghast class levels from libris mortis.
Now the question I have is since its probably going to be starting at 2nd level I was thinking what base race, and previous class I should go with. Rogue seems good for sneaking. The ghoul paralysis ability works great for sneak attack, since they would be unable to defend them selfs properly. But also monk would work well since you gain the boost to unarmed damage and attacks.
If I reach third level that gives me three attack to hit with that are natural, and if one hits they need a will save or be paralyzed. Plus stunning fist at first level is a great boost once again. Also there is going ranger for the bonus feats under the two weapon fighting style, but I only get the first bonus feat at second level.
A fighter is good choice since ill have back up weapons and armor to choose from, since the ghoul class only give you proficiency with simple weapons. Race I was think would best be any but dwarf, or a small creature. Any non small because I would make my penitence of attack damage dice go from 1d4 claw to 1d3 and my 1d3 bite to 1d2.
EDIT: ok level ten is starting level so I just need to devise which four other class levels to take.

Clarification for you: When taking levels of a monster class, you MUST take ALL of the monster levels BEFORE you take class levels. And since you're undead, Con is useless. I recommend elf, since they get a con penalty, which you get to ditch.

ah heres a clarification is the level class level you start at doesnt have to be the undead class, its just as soon as you start it you have to finish it. And the old days didnt really make much sense. The elf just goes to some mystic place at they can only go when there about to die, and are never heard from since. Doesnt make much sense

I have to admit though, I should have reread that post, I did poor word placing and sentence structure. Here is a clarification for you. The undead class levels dont require that you start your class levels as undead. You could have started rogue or fighter or something like that, but once you start a undead class you have to finish it. Once again sorry for such bad grammar, and thanks for pointing it out.

Incorrect. Undead classes are not actually classes; they're simply ways for players to play something which begins at a level too high for the campaign at a lower level. If you have class levels before becoming an undead, it means you became undead after gaining some experience. The rules for becoming undead (vampires and liches excluded) state that the character loses all character levels, skills, hit dice, feats, what-have-you. Basically, you lose all but your ability scores, and even so some of those change, too (such as your Constitution, which dissappears). So basically, you're incorrect. Oh, and rules also say you're a d**k! (Someone please get the reference...)

I do not get the reference. I may have miss understood something in libris mortis then, But I am looking right at the book, and the "How monstrous classes work" part. It says nothing about having to lose all prior class levels, feats, skills, and such. So unless I am miss understanding you as well I still dont see a mistake in my logic. It also called a monster class, so it is a class. Hence the levels. I do see that it is a way to get to be a undead with out the level adjustment. Oh and I have just noticed something extra in the example section. It says a dwarf fighter 5, gets slain by a vampire that used its energy drain, is brought back as a dwarf 4/ vampire spawn 1. If what you said was true it would be a dwarf vampire spawn 5, correct?

If you look at the rules for creating undead spawn (such as vampire spawn, for example (but not VAMPIRES)), you'll notice that the character loses all character traits except abilities, and even those are modified heavily.
