What level do you ride at and what discipline do you ride?? What kind of bit do you use?? Do you ride with spurs or a whip?? You are not giving us much information... If you answer all my questions I might be able to help.
I ride english and I have the level of the two galops. I use a bit in caoutchouc.

I mean are you beginner, intermediate? I don't know what "gallops" is... What kind of bit do you use??
I use a verdun.
Well, I've never heard of that nor is my reasearch on that bit going well. I've found nothing. Do you have a picture of the bit your using? Is it a mild or Stronger (Some may say Harsher) bit?
Have you tried just a snaffle at all?

This is what I use on my horse... a pretty mild bit.
Have you checked your position and your hands?
I know it sounds silly, but so many horses that are "unstoppable" can be stopped with seat alone. Do you know how to properly use seat? If you dont ( and even if you do coz its always good to brush up on skills) find a quiet horse and get lunged. Ask someone to lunge you, but ask the lunger to not give instructions to the horse, then take away your reins and strirrups. Do lots of transitions (upwards and downwards and within the pace). start slowly i.e walk to halt, and then build up to canter etc. It'll take a bit to get the hang off, but soon you'll realise how much you use your body, and how much it can help instead of harsher bits.
Start from ground 1. Do more groundwork. Period. Get that horse to STOP when you say whoa. No bit at all..
As well... Have you heard of the one-rein-stop? Its very useful, and you won't have to haul on your horses mouth. If your horse starts to get quick, one-rein-stop. Its a good thing for horse and rider to know.
If you need to use it:
1. Bring your elbow back to take the rein, this will bring the head around.
At the SAME TIME bring your leg back and push the hind quarters around.
For example, your going to the left... if you needed to, you'd take with the inside (left rein) and push him around with your inside (left) leg.
But I think you need to do a few things with this horse, not from just the saddle.
