I know I posted this before elsewhere, but since elsewhere is no more, I might as well add it here. And while all these sweets are GOOD, balance is also good smile
1 5-6 oz bag baby spinach leaves
1 tbsp butter
1/2 tbsp olive oil
1 clove garlic, pressed or minced
1/2 tsp lemon juice
salt and pepper
In a large, wide frying pan over medium heat, melt the butter with the olive oil. Add the garlic and sautee until just beginning to brown, stirring constantly, about two minutes. It's ok to undercook the garlic a little.
Add the spinach all at once, and turn gently to coat in the butter/garlic mixture - tongs are really useful for this. Continue to cook and turn the spinach until it's approximately half wilted.
Turn off the heat, add the lemon juice and salt and pepper to taste. Continue to turn and stir the mixture in the hot frying pan just until it's completely wilted. Serve immediately or at least within 5 minutes.
There's plenty of residual heat in the pan to finish the cooking, and it helps control the cooking down/wilting process. From my own experimentations I've found that 1.5 tbsp of oil/butter/whatever is the right amount to coat all the leaves in a bag of baby spinach nicely without making it soggy or greasy.
