~Beverages/Mocktails~(Non-alcoholic)
The English Garden Sipper: Fill a cooler glass with ice.Add 4oz. iced tea and 4oz. raspberry juice.Garnish with fresh lemon and raspberries.
The Cherry Ale: Fill a glass with ice.Add 2oz. cherry juice,1/2 oz. lime cordial and top with ginger ale.Garnish with lime wheel or cherries.
The Gentle Breeze: Fill a goblet with ice.Add 4oz. cranberry juice and 4oz. grapefruit juice.Garnish with a fresh cranberry and mint leaf.
Sparking Lemon Float You will need: Vanilla Ice Cream(2 scoops per cup) Sparkling Lemonade(from 2Litre bottle) -Opinional fruit for garnish.Total time: 2 minutes
Frosty Coffee Smoothie 1/2 cup(125mL) cold water with coffee(instant) 1/2 cup(125mL) milk 4 scoops vanilla ice cream Top it off with chocolate sprinkles.Serves 2.
Snowman In A Mug Mint candy adds fresh, frosty flavour to this creamy white chocolate drink. Delightfully different! A perfect gift when you scoop some of this tasty mix into a homemade Snowman Jar (directions below). Skim milk powder 2 cups 500 mL White hot chocolate mix 1 cup 250 mL
Powdered coffee whitener 1/2 cup 125 mL Candy cane pieces (or hard mint candies) 1/4 cup 60 mL
Miniature marshmallows 1 cup 250 mL Candy canes (or candy sticks), 4 4
4 inches (10 cm) each, for garnish Process first 4 ingredients in blender or food processor until fine powder. Transfer to large bowl. Add marshmallows. Stir well. Spoon into jar with tight-fitting lid. Tie candy canes with raffia or ribbon to jar. Makes about 4 cups (1 L).
Directions for Snowman-In-A-Mug: Spoon 3 to 4 tbsp. (50 to 60 mL) Snowman-In-A-Mug Mix into each of 4 large mugs. Add 3/4 cup (175 mL) boiling water. Stir. Garnish each with 1 candy cane for stirring. Serves 4.

Blissful Bruschetta
1 lb ripe plum tomatoes(about6),seeded and chopped 2-4 tablespoons Extra Virgin Olive Oil 2 tbs chopped fresh basil or parsley 1 clove garlic,minced Salt & pepper to taste 1 bag chips(tortilla) To make: Conbine all ingredients except chips(tortilla) in a bowl.Cover and refrigerate at least 15 minutes or until ready to serve.Serves 8-10 people.
Egg Salad Sandwich
1/4 cup mayonnaise 2 tsp lemon juice 1 tsp dried minced onion 1/4 tsp pepper 6 hard-cooked eggs, chopped 1/2 cup finely chopped celery Combine mayo, lemon juice, onion, and pepper. Stir in eggs and celery. Cover and chill.
Spaghetti
1 pound ground beef, browned and drained 1 green pepper, chopped 1 can tomato paste 1 can tomato sauce 1 can chopped tomato 2 cloves garlic, pressed oregano, to taste basil, to taste salt and pepper, to taste
Brown and drain the ground beef. Add remaining ingredients and simmer for at least 30 minutes. Longer it simmers the more flavorful it will be. Can also add red &/or yellow peppers.
Easy Banana Nut Bread
1 1/2 cup Flour 1/2 cup Butter, softened 1 cup Sugar 2 Eggs 4 small Bananas, mashed 3/4 teasoons Baking soda 1/2 teaspoon Salt 1 1/2 cup Flour 3/4 c Chopped walnuts
Cream butter and sugar until fluffy in one bowl; add eggs one at a time beating well after each addition. Stir in bananas.
Mix flour, baking soda, and salt in another bowl. Add little by little to the egg mixture until well mixed. Add walnuts and mix well.
Pour into a greased bread pan, bake at 350F for 30-35 minutes.
Fried Cauliflower
1/2 head cauliflower 1 eggs, beaten 1/4 cup of so of flour for dredging 1/4 cup or so of bread crumbs
Take the cauliflower and trim it into pieces with 1" stems. Boil in salted water for 5 minutes and then drain. Heat the oil in a frying pan, just a thin layer really, less than 1/2" deep.
Use pie pans or small plates or bowls and put the flour in one, the egg in another, and the bread crumbs in the final one.
Use a pair of forks to dredge the cauliflower pieces in flour, then egg, then bread crumbs. Set the cauliflower gently in the hot oil, letting the breading brown before turning. When all sides are browned, lift the pieces out and lay on brown paper or paper towels to absorb some of the oil.
Salt and pepper to taste.
Potato Salad: To prepare potatoes for potato salad, cook potatoes (1-inch pieces), covered, in 2 inches boiling water in medium saucepan for 10 to 12 minutes or until just tender; drain. Add dressing to potatoes while still warm. Add chopped vegetables (such as celery, onion and pickles) and chopped hard-boiled eggs; toss to combine. Season with salt and pepper, as desired.
Wonton Soup: 1 lb ground pork -- or 1 1/2 lbs 1/2 ts ground ginger 1/2 ts black pepper 3 cn chicken broth -- (14.5 oz ea 1 cup water 2 Tbs soy sauce 2 1/2 oz fresh mushrooms -- sliced (1 cup) 6 scallions -- sliced 1 package(6oz) won-ton : wrappers -- cut into 1/2" : strips
In a soup pot, brown the pork over medium-high heat for 3 to 5 minutes, or until no pink remains. Drain off the excess liquid. Reduce the heat to medium and add the remaining ingredients except the wonton strips; bring to a boil. Separate the wonton strips and stir into the soup. Cook for 8 to 10 more minutes, or until the wonton strips are cooked.

~Yummy Desserts~ Rice KrispiesĀ® TreatsĀ® Spider
Ingredients
* 3 tablespoons margarine or butter * 1 package (10 oz. about 40 marshmallows) or 4 cups miniature marshmallows * 6 cups Rice KrispiesĀ®
Directions
1. In a large microwave-safe bowl, melt margarine and marshmallows on HIGH for 2 minutes, stirring after 1 minute. Add a few drops of food coloring and stir mixture until smooth.
2. Add Kellogg's Rice Krispies cereal, stirring until well coated. Let cereal mixture slightly until it is safe to touch. With buttered hands, shape cereal mixture into spider shapes and place on waxed paper. Let cool.
3. Decorate spider using candy corn for eyes, candy-coated gum for teeth, licorice for web and colored coconut for hair. Attach decorations with frosting. Tip: Color coconut by soaking in warm water with a few drops of food coloring for about 30 minutes. Dry coconut on paper towels before using.
Yield: 3 - 5 spiders
Boo Cups
3 1/4 cups cold milk 2 (3.25-ounce) packages JELL-O Chocolate Flavor Instant Pudding & Pie Filling 1 (8-ounce) tub COOL WHIP Whipped Topping, thawed, divided use 20 OREO Chocolate Sandwich Cookies, crushed, divided use 30 miniature semi-sweet chocolate chips
1. Pour milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 minutes or until well blended. Gently stir in half of the whipped topping and half of the crushed cookies. 2. Spoon 1 tablespoon of the remaining crushed cookies into each of 15 individual cups. Spoon pudding mixture evenly into cups; top with remaining crushed cookies. 3. Drop remaining whipped topping by spoonfuls onto desserts to create "ghosts." 4. Decorate with chocolate chips to create "eyes." Refrigerate until ready to serve. Watch the ghosts disappear! Store leftover desserts in refrigerator.
Makes 15 servings.
Candy Corn Popcorn Balls
1/4 cup butter or margarine 1 (10.5-ounce) package Jet-Puffed Miniature Marshmallows 1 (3.25-ounce) package Jell-O Brand Gelatin, any flavor 12 cups popped popcorn 1 cup candy corn
1. Microwave butter and marshmallows in large microwavable bowl on HIGH 1 1/2 to 2 minutes or until marshmallows are puffed. Stir in gelatin until well blended. 2. Pour marshmallow mixture over combined popcorn and candy corn in large bowl. Mix lightly until well coated. 3. Shape into 16 (2-inch) balls or other shapes with greased or wet hands.
Makes 16 servings.
Extra Special: Wrap each ball in plastic wrap and tie with raffia or ribbon, if desired.
Chocolate Mousse All you need: Half a bag of chocolate chips and half whip cream(from tub) Let boil for 20 minutes in coffee machine-Stir immediately after.Put inside freezer for 2 hours.
Rice Pudding 6 cups cold milk 2 cups water 3/4 c. long-grain rice 3/4 cup sugar 1 tsp. vanilla extract ground cinnamon
In one pan put the milk to boil (low heat). In another pan bring water to boil, and put rice in the boiling water. When the rice is soft and the water has disappeared, put the hot milk into the rice and stir constantly. Add sugar and vanilla (stirring). Once the rice-milk is thick then you are done, put it in bowls and let it cool down, (later put it in the refrigerator). Sprinkle cinnamon before serving. *When I make rice pudding I don't use vanilla extract.Instead I put in lemon skins.*
HOMEMADE VANILLA CAKE 2 sticks butter, softened 1 3/4 c. sugar 3 c. flour 2 tsp. baking powder 4 eggs (separate) 1 tsp. vanilla 1 1/2 c. milk
Beat yolks, sugar and butter. Add flour, milk, baking powder and vanilla. Beat egg whites slightly. Add shake of salt. Turn into other bowl. Mix. Pour in square aluminum pan. Flour and grease. Bake at 350 degrees until done, 40-50 minutes.
VANILLA POUND CAKE
2 1/4 c. sugar 1 1/2 c. butter (3 sticks), softened 1 tbsp. vanilla extract 3/4 tsp. salt 6 lg. eggs 3 c. cake flour
1. Preheat oven to 325 degrees. Grease and flour 10 inch bundt pan.
2. In large bowl, with mixer at low speed, beat sugar and butter just until blended. Increase speed to high; beat until light and fluffy about 5 minutes. Add vanilla, salt and eggs on low speed; beat until well blended. Increase speed to high; beat 3 minutes. Fold in cake flour just until smooth.
3. Spoon batter into pan. Bake 60 to 70 minutes until toothpick inserted in center comes out clean. Cool cake in pan on wire rack 10 minutes. Remove from pan and cool completely on rack.

TIPS:
How to Make a Fluffier Baked Potato
Pierce potato with a fork several times before baking to allow steam to escape. Do not wrap potatoes in aluminum foil, which will give them a steamed texture. To serve, use a small knife to cut a cross on top. Push sides and ends gently to fluff.
How to Get Softer Skin on a Baked Potato
Lightly rub potato with oil or softened butter before baking.
