Hello everyone! 🧡🧡🧡 Fall is my favorite time of the year! I enjoy baking and cooking during this time of year. And I'm sure many of you do as well.
I love trying new recipes using Pumpkin or Apples!
Do you have any Favorite Fall Recipes you'd like to share with everyone that use these two Fall staples?

Pumpkin Pie Crunch
Ingredients
1 can (15.5 oz.) solid pack pumpkin 1 can (12 oz.) evaporated milk 3 large eggs 1 1/2 cups sugar *(optional) 1 Tbsp pumpkin pie spice 1/2 tsp salt *(optional) 1 package Duncan Hines Classic Yellow Cake Mix 1 cup unsalted butter or margarine, melted 1 cup chopped pecans (or your favorite nut)
Baking Instructions
1. Preheat oven to 350° F. Grease and flour 13 x 9 -inch pan.
2. Combine pumpkin, evaporated milk, eggs, sugar, pumpkin pie spice and salt in large bowl. Stir until blended.
3. Pour pumpkin mixture into prepared pan. Sprinkle dry cake mix evenly over the pumpkin mixture and drizzle with butter.
4. Bake 25 minutes; remove from oven and sprinkle with chopped pecans. Tightly cover with aluminum foil and bake an additional 25 minutes.
5. Cool completely. To serve, cut into squares.
*(optional) - sugar, salt I have these two items listed this way because I feel this was way too much sugar. The pumpkin filling ended up being extremely sweet. (Diabetics beware!) I recommend only using a 1/2 cup of sugar or use a small amount of a sugar substitute. Honestly, I will omit it completely when I make it again. And I don't normally add salt to any recipe unless I feel it's absolutely necessary, so of course I left it out.
Over all the recipe is quite simple to make and it really is quite tasty! When we served the dish, it had been refrigerated and cut into squares. Although I am quite sure that it would be absolutely fantastic served warmed and just dipped from the dish! Add a really good cup of coffee and you've got Fall on a plate! You could also serve some whipped topping or vanilla bean ice cream with it. The possibilities sometimes are endless!!
Side note - This freezes really well. So you can cut it into individual servings and save some for later!
Please let me know if you try this and what you think of it!
Happy Fall everyone!
