Since being in quarantine with my daughter we have been baking a lot and doing a lot of different things. As suggested by Glengrin decided to share some recipes i have used with you guys.

Most of these will be for food but i may throw others in there too!

Please share your recipes with me too!

Cinnamon Applesause Bread

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Servings: 8

Ingredients
1 1/4 cup applesauce (I used unsweetened but any kind works)
3/4 cup sugar
1/2 cup vegetable oil
2 eggs
3 tbsp milk
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp pumpkin pie spice
1/4 tsp salt

Instructions
Preheat oven to 350 degrees and grease a 9x5 loaf pan or 5 mini loaf pans.
In a medium bowl, combine the applesauce, sugar, vegetable oil, eggs, and milk.
Slowly add in the flour, baking soda, baking powder, cinnamon, nutmeg, pumpkin pie spice, and salt.
Stir until just combined.
Pour batter into prepared loaf pan(s) and place in oven to bake for 30 minutes if making mini loaves, or about 60 minutes if making large loaf.
Once toothpick comes out clean once inserted in center, remove from oven and allow to cool slightly before serving!

CORN BREAD

1 cup flour
1 cup corn meal
2 Tbs sugar
1 1/2 tsp baking powder
1 tsp salt
1/3 cup butter softened
1 egg
1 cup milk

preheat oven to 400 F; grease or use nonstick spray an 8" x 8" pan.

mix or sift together dry ingredients.
cut in butter until mixture is crumbly
mix then add egg and milk, stir until evenly moistened; don't overmix

put in pan and bake 25 min or until golden brown on top.

Cool and cut into pieces.

Minestrone Soup

1 can each black bean soup, kidney beans, chopped tomatoes
8 cups chicken or vegetable broth or water
1 cup each or more:
shredded cabbage,
chopped carrots
celery,
onion (green, red, yellow or white)
optional extra veggies include summer squash, spinach, swiss chard. leeks and more. I used swiss chard this last batch and it was great.
2 tsp+ jarred crushed garlic or a few cloves fresh crushed
A ton of basil, either fresh, frozen or dried. If fresh or frozen, 3 Tbl or more; 2 tsp or more to taste if dried
1/2 tsp salt
1 cup or more broken up spaghetti (I use whole wheat)
optional, splash of white wine
Parmesan cheese

Put all of the ingredients except pasta and cheese in a large stock pot and bring to a boil. Simmer 1 hour. Add spaghetti and cook another half hour. Serve topped with Parmesan cheese.
