So for new years my family has started a "Meatless Mondays" resolution. Pretty simple we won't consume meat on Mondays. But I love meat and need some good recipes so:
I am asking if you fellow TAGGERS have any good meatless recipes we should try?
Summary- This is Legit Get your mind out of the gutter.

I know plenty of recipes. Do you want something hearty, or something on the lighter side? One thing that is pretty easy is meatless chili. Add more tomatoes and beans, of course, but there are certain additions that you can put in to make up for the lack of meatiness as well. Mushrooms are always good meat substitutes whether you use it for taco meat or put it in your lasagna.
You could also try any number of meatless casseroles, and any pasta dish you make with meat, you can also make without. Instead of adding chicken to Fettuccine Alfredo, you can add grape tomatoes and spinach. Eggplant Parmesan is also a pretty hearty dish that doesn't have any meat, and you can fry it or bake it.

Eggplant parm. Practically everything I make has meat in it but eggplant parm is just as good.

Vegetable Curries are good and have so much flavor. And luckily, you have many curries to choose from.
