Crockpot Chicken Noodle Soup
^------I substituted a sprig of rosemary for the thyme, since I'm not big on thyme. It tastes pretty good that way. wink Might add more garlic next time I make it, though.

Turkey Enchiladas
^------I used cream of mushroom instead of cream of celery and chicken instead of turkey. Turned out pretty tasty. smile

My mom's Veal Scallopine

2 1/2 lbs veal stew meat
1/2 c. flour
1/2 t. seasoned salt
1 small onion, finely chopped
3/4 c. slicked mushrooms
1 28 oz. can tomato sauce
1 T. sugar
1 t. parsley flakes

Mix flour and seasoned salt. Dredge meat in flour and brown in vegetable oil. In 6 qt casserole dish, mix tomato sauce, sugar, onion, and parsley. Add browned veal. Cover and bake 40 min at 350 degrees F. Remove lid and bake additional 20 min. Serve over rice.
