My husband and I came across this recipe a couple christmas's ago and now it's a family favourite. I swear there would be riots in the street if we didn't make it and it's sooooo simple.

Apple Cider Caramel Cookies:

Ingredients

1 cup unsalted butter, nearly melted
1 cup granulated sugar
1/2 teaspoon salt
1 (7.4 ounce) box Alpine Spiced Apple Cider Instant Original Drink Mix *Not sugar free*
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
3 cups all-purpose flour
1 (14 ounce) bag Kraft Caramels

Instructions

1. Preheat oven to 350 degrees F (190 degrees C). Line cookie sheets with parchment paper.

2. In a stand mixer, cream together butter, sugar, salt, and all 10 packets of apple cider mix until smooth and fluffy. Beat in eggs and vanilla extract, then mix in the baking soda and baking powder. Add the flour and mix until just combined.

3. With a standard (size 50) cookie scoop, scoop the dough scrapping off the excess as you go up the bowl. Flatten the dough slightly in your hand and place a caramel in the center. Work the dough around the caramel sealing well. Place the cookies two inches apart on the sheets.

4. Bake 12 to 14 minutes or until golden brown around the edges. After baking, carefully slide the parchment with the cookies onto the counter. Let cool until they are no longer soft but still slightly warm. Twist gently to remove, and cool the rest of the way upside down on the parchment or on a cooling rack.

Notes: If cookies get too cool before you twist them off, freeze the whole sheet for a few minutes and they’ll come right off.

We don't use a stand mixer or the "cookie scoop". We've actually found you get better results if you flatten the caramel squares and then cover them completely in the cookie dough. We found that it bakes more evenly and that there's less caramel ooze.

These are amazing right out of the oven and you can microwave them quickly to get them back to their gooey caramel stage.

I like to make divinity for Christmas. I just found this recipe that suggests cherries instead of pecans! I might try that this year. :3

A lot of people say they can't get it to set, but my problem is that it's always trying to set before I get it outta the bowl! gonk

My grandmother makes great ginger snaps. You should make those, if you haven't had them before. smile

Oooh, my favourite is the very traditional Lucia-bun! Or as we say Lussebulle 4laugh It's sooo yummy! they are all yellow and with raisins in, nom nom! The yellow is because of the saffron, I think that's what it called in english. It's not overly sweet but instead has a hmm, it's so hard to describe, I really recommend them! 4laugh but that is my all-time favourite holiday yummy!

That is very different, is it spicy? Sounds good though.
