That people who don't eat meat or anything containing meat seem to be more mellow and far less violent than those who do?

I recognize this in myself. When I was eating meat I had no problems at all to watch violent movies, read about accidents or watch someone cutting up meat.
Since I became a vegetarian I can barely watch violent movies. I can start crying when I read the news, or if I see my parents cut up meat.
All vegetarians I know are very gentle and caring. Also sensitive to violence as me.

yes i definitely think so... not meaning that people who do eat meat are violent by default or anything, but people who don't eat it tend to have peaceful inclinations, since after all a common reason for abstaining from meat is avoiding unnecessary violence... : )
