I looove apple cider donuts, and since becoming vegan I wanted to make some to celebrate autumn. I found this recipe online, and they are quick and easy to make if you have a donut pan, and very moist and yummy! They're a big hit with my family and friends.

APPLE CIDER DOUGHNUTS
1 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp allspice
1/2 tsp salt
1/3 cup maple syrup
1/4 cup apple cider
1/4 cup apple sauce
1 tbsp canola oil
1 tsp vanilla extract

APPLE CIDER GLAZE
1 cup powdered sugar
2 tbsp apple cider

CINNAMON SUGAR TOPPING
1/2 cup granulated sugar
1 tbsp cinnamon
1/4 tsp nutmeg
Instructions

1. Preheat the oven to 350 degrees Fahrenheit. Generously grease a donut pan and set aside.

2. In a small bowl combine flour, baking powder, baking soda, spices, and salt. In a separate bowl whisk together maple syrup, apple cider, apple sauce, canola oil, and vanilla extract. Add wet ingredients to dry and mix until just combined.

3. Spoon or pipe batter into the prepared doughnut pan, filling each mold about 3/4 full.

4. Bake for 8-10 minutes, until doughnuts springs back when gently pressed. Remove from oven and let cool in pan for a few minutes before transferring doughnuts onto a cooling rack to cool completely.

5. To make glaze, whisk together powdered sugar and apple cider in a small shallow bowl. In a separate bowl, combine ingredients for cinnamon sugar topping.

6. Once doughnuts have cooled, dip the tops of each doughnut into the glaze. Immediately sprinkle with cinnamon sugar.

7. Let glaze harden and enjoy!



Personally, I did mine without the glaze, and just pressed them into a bit of sugar and cinnamon, to avoid adding more refined sugar than necessary and keep these healthier. They are still super yummy without the glaze, which I personally found in another batch can overshadow the apple cider taste because it is so sweet. They also go great with apple cider or hot toddies smile

Wow!! Those look super yummy!!!!!!!! heart heart I think I'm gonna try to make them when I visit my family for the holidays. They don't think vegans have any good food.

hehe go for it!! im bringing them to my dads side of the family for thanksgiving since theyve been such a hit with people i know so far... mrgreen i brought them to a halloween party and one of my friends put her hands on her cheeks and stared off into space gaping in amazement for a minute after she said "wait--these are vegan??" and i said "yes"... LOL

lol yeah a lot of people just dont realize that basically everything can be made without meat or dairy surprised i used to say "i can never go vegan because i cant give up all these foods i like with animal products in them"... imagining id have to eat fruit and salads only forever lol... but now i still eat all my favorite foods, just versions without the animal products haha!! pastries, chocolate, ice cream, pizza, mac n cheese, its all possible emotion_kirakira
