Hello,
So I'm still new to the vegan diet. I know it can be healthy when done right, which I'm probably not doing. You gotta have a lot of variety and such, but the problem is, I'm on kind of a tight budget for it, and healthy foods can be so expensive. I've been eating things like pasta with tomato, mixed vegetables, peanut butter and jelly sandwiches, oatmeal, and fruits, and things like that.
Anyway, my question, what is the most basic vegan diet you can have while still getting the right nutrition? I can't really get many different fruits and veggies at a time, so which are most important? Also, it's important that they not be too expensive..I know there are lots of vegan recipes, but most call for lots of ingredients, and I'm more into just two or three ingredients types of foods.
So any ideas?
