Well, if this guild is any indication, people just aren't playing Skyrim like they used to. I'm getting back into it by creating a character unlike any I've made before. I'm playing a race I usually don't (redguard), leveling skills I don't usually bother with and climbing their perk trees (alchemy), and building a house where I've never built before (Morthal).

What else can I do to create a unique experience? The only "guild" I've never joined is the Companions but I can't see her doing that.

Honestly its hard to take the game in "new directions" I find, atleast compared to Oblivion. I just recently stopped playing again because I was starting a new character every week. I needed a break so I would not ruin the game.

Have you tried playing as if it was an old-school RPG where you had to find your new equipment and could only buy healing supplies and what not?

You mean avoid restoration magic and smithing? Yeah, I always play each character as a unique one and give them individual talents. My current is a black mage and I don't even allow her to carry weapons.

I find you have to play like that, however even just avoiding buying or smithing your own equipment is a nice way to make things harder on you and leaves you looking kinda messed up since you rarely form a complete set lol.

You want a new experience?

Choose a character you never have before (for example, your new Redguard).

Make them professionals of skills you don't normally use, but make it focused (for example, you mentioned alchemy, so use something that works with alchemy, like melee weapons with poison.

Using a core set of four to five skills, create a "class" for your person and a history for them. I loved doing this in Morrowind. You basically say "my character grew up doing this, so now they're only good at this."

I.e. your Redguard is a master Brewmaster, one who creates ultra deadly poisons and super powerful potions to keep herself at the top of her game, everything else comes secondary to her alchemy since she was raised by a popular alchemist in Hammerfell.

Do not fast travel anywhere. Always walk. Fast traveling like in Oblivion and Skyrim takes the fun away, along with more than half of the game time. The best experience is walking and coming across something new. Although in some cases, using the wagons for travel are okay, but beyond that, simply walk.

Do Daedric quests, side quests, and if you want more structure, do a new guild quest line.

Make a goal for yourself. Find all the word walls. Get 40 dragon souls. Collect a full suit of daedric armor. Kill 100 people. Something simple but timely.

I still play Skyrim, Oblivion, and Morrowind. I know how to keep it going.
