We can speak all day of how much we hate them and how we all have a different tactic, but have we ever noticed any exploitable weaknesses each foe has?

Leaving elemental weaknesses aside, here's a few:
When a dragon staggers, it doesn't matter how weak or strong the blow was, a dragon's stagger time is always the same. You can exploit this by using something simple like the clear weather shout and then blast magic or use a powerful weapon or even arrows!
The Aldmeri Dominion makes heavy use of both physical and magical offense. I blast them with both Ice Storm and Chain Lightning. No stamina, no magic, no challenge.

MOTHER****ING BEARS!!!

They hit hard and have little staggering time.
You can, however, exploit it's standing power attack loop. When you are standing still or running towards it the bear will want to stand on it's hind legs and do this power attack. You can easily walk back and wait for the animation to almost end and then interrupt with a power attack. This is a suitable strategy for melee combatants.
Bears will make no attempt to jump and will go around objects, find higher land to then reach your location, and then attack you from above. Ranged fighters can jump onto platforms of different height to avoid damage or even getting close to the animal.
If you have the Impact perk from destruction you can easily make any bear stagger and prevent attack, BUT bears' staggering time is so fast that it will give no time to do anything else except walk back and fire magic. You can also use the ranged attack spam/strategy. This works well along with conjuring "allies" and making wild animals "infuriated" with illusion. That not only distracts the bear but also makes him take a few points of damage.
Finally, making them feel the FURY OF ICE reduces their ability to deal damage with power attacks. No stamina. No challenge.

Ultimately, these are simple exploitations to make your life easier when you really don't want to deal with one of them at the moment, not a good strategy to call yourself "skilled".
