If I were paint a landscape with closeup tree, bushes, and a lake. Should there be a mountain or sunset view in the background?

tbh it really depends on the atmosphere you're looking for
try sketching out rough thumbnails with each and decide what fits better

Mountains. The atmosphere you can do for mountains can be so many wonderful things! A little limited with a sunset. :]
