if i flipped it to unholy fiend and then used the conjurer's closet to flip it back, would i still have to pay the 1 life?

From my understanding you won't lose the life cause unholy is no longer on the in play

Unholy Fiend - At the beginning of your end step, you lose 1 life.
Conjurer's Closet - At the beginning of your end step, you may exile target creature you control, then return that card to the battlefield under your control.

Yes, you would still have to pay the life. Both effects trigger at the same time and are placed on the stack. It doesn't matter if the Unholy Fiend is there when the effect resolves.

You can still use Cloudshift, Restoration Angel, and the like to do so. Just do it before the End of Turn Phase.
