Mango ontop of Sweet Rice
The first time I had this, it was at a restaurant that I used to go to before moving down to the beach area I live in now. As usual, after I eat something at a restaurant that I fall inlove with I just have to find out how to make it myself at home so I can enjoy it anytime. It has surprisingly few ingredients, and they arent very hard to find or expensive, so its something you can try making anytime.
Ingredients~
- 1 1/2 cups sweet rice - 1 can coconut milk/cream - 1-2 mango (any kind) - sugar*
* perhaps add only a pinch or two of sugar into the cocunut milk/cream as its cooking, keep in mind that mangoes add natural sugar to the dish. Personally I find it needs little if any sugar.
Prepare the rice as you would normally, I usually steam mine either in a pot or rice cooker. When its done set aside. Open your can of coconut milk/cream and add it to a small pot. Turn heat to low, and heat through gently. Slice mango into pieces. When rice is done put onto a plate or in a large bowl, arrange the mango pieces ontop, and finally pour the warm coconut milk/cream over it.
You're done, delicious! This is making me wish I had a few mangoes in the house so I could make some right now heh.

I'm always hesitant to post recipes because I never really know if it helps people or not heh. Meh, don't be! I'm always looking for delicious, easy recipes to use! Sadly, mangoes are hard to find this time of season for me... I'll have to wait till spring to try this one probably! ;(

Sweet_lil_Cherryhead Meh, don't be! I'm always looking for delicious, easy recipes to use! Sadly, mangoes are hard to find this time of season for me... I'll have to wait till spring to try this one probably! ;( I have/know a verrrrry similar recipe, but with bananas if youre interested. And I understand what you mean by not being able to find things due to it being a seasonal ingredient >.< I'm happy that as bad as we think that is now - we live in a time where we are able to find foods out of their respective season.... in comparison to 50 or 100 years ago at least.

Haha! True! I live find of in a farmer town, so a lot of out groceries stores use local produce and such. I could probably find magoes if I really tried, but they would be so bitter! And YEe! I had something like this with bananas before, only no coconut milk and you heat up the banana and rice, then add sugar. It was pretty good!

I really want to try this as a dish for the holidays! And it looks so easy to make!
Several months ago I went to a Tai restaurant and they had this. I tried it with my sweetheart and it was DIVINE! cat_4laugh

Thats really cool that groceries use local produce like that, it helps out the farmers and food tastes better when its in season anyhow heheh. Hrmmm I know theres a trick to letting mangoes ripen even wehn theyre hard.... usually I just let mine sit around on the counter for a week or however long until they soften a bit. And yummmmm that sounds good~ The banana recipe I hae is just banans simmered in coconut milk pretty much, then you can have it warm or the next day when its from the fridge you can have it cool like a pudding.

I miss that place x3 Luckily I know how to make a lot of the things that I enjoyed there myself, so I can still sort of feel like I'm experiencing it.
