Thought I'd officially share my first original recipe here. It's fairly quick to make - 5 to 10 minutes depending on how efficient you are in the kitchen and the state of your ingredients.

Vegetable Fried Rice!

Ingredients!
Makes 1 serving - 2 if you're a light eater.

  • 1 cup cooked rice. I use brown. Can be warm or cool. I mostly use warm as mine generally comes out of the freezer and needs to be defrosted.
  • 1/4 cup frozen mixed vegetables. Can be frozen or defrosted, I've used various stages of both.
  • Extra Virgin Olive Oil [EVOO] and/or non-stick cooking spray
  • Salt and pepper, other seasonings to taste

    Want to mix it up?

  • Add in 1 egg, scrambled or fried and crumbled and/or
  • 1/4 cup [more or less to taste] Cooked ground beef or soboro,


Directions!

  • Over medium heat sauté veggies in cooking spray or 1 tablespoon EVOO until cooked through and lightly browning [Approximately 2 to 3 minutes].
  • Add salt and pepper to taste.
  • If using meat/soboro, add it now and continue to cook until heated through.
  • Add entire cup of rice and mix well, create small holes in dish to add another tablespoon of EVOO, if desired, to reduce sticking
  • If using egg, add it to the pan now or cook separately and add in.
  • Cook until rice is heated through and well combined with the other ingredients.
  • Add any other desired seasonings now, to taste.


Remember!

If going into your bento, let it cool completely before packing/closing.

Otherwise, it's ready to eat. Makes a great side dish or can be a main dish.
