Good Evening fellow foodies. I dont know about you guys, but there are certain times when I'm feeling a little sick, or I went too long without eating so I dont want anything very heavy or hard to digest. This is a good recipe for those times, and even if you arent sick who doesnt love ginger? Or rice for that matter? Hahah.
Ingredients~
- 1 cup rice*
- 1 clove garlic, minced
- 1 tiny nub/bit of ginger, julienned very very finely**
- 1 spring onion, sliced
- 1 egg
- Rice vinegar, soy sauce *enough for personal taste
- Any veggies would be good to add like pea, carrot or mushroom. I didnt have any onhand so mine was more simple
*Obviously this recipe can be scaled up or down, but since I was making it just for myself I made a single serving portion
**You an adjust accordingly, but I find a little fresh ginger root goes a long way
Prepare the rice as you would normally, I usually steam mine either in a pot or rice cooker. When its done set aside. In a frying/sautee pan add a bit of olive oil, enough to coat the pan and toss in the garlic and when it becomes freagrant (not browned) toss in the ginger. When both fragrant/starting to change color toss in the spring onion and give a quick stir. Toss in rice and stir gently, rice doesnt like to be messed with too much. After 2-4 minutes take out and place in bowl. Pan fry the egg and place ontop of your rice bowl.
Youre done, yummy! A healthy easy to digest meal that your tummy will thank you for. Use as a main or side dish in bentos. Can work as a main due to the balance of veggies, protein, and starch in the dish.
