Koi's Kitchenette Korner
Welcome!
This is my kitchen diary of failure, frustration and rare moments of brilliance. It'll be updated whenever I find the time.
Feel free to post stuff! I don't mind. Especially recipes you think I'd like to try. emotion_bigheart
About the Cook!
I'm terrible at cooking! Why? Because I have a terrible attention span and/or memory. Expect to see the words 'It [insert action] cuz I forgot about it' and many variations very often.
I rarely follow recipes to a tee. If I include recipes in my posts there'll be no seasonings. Season however you wish - that's what I do. There may be recommendations. Also, all most measurements will be approximate. I know I don't measure correctly. And I certainly don't write it down as I make it. That said: I'll try to include links as often as possible.
Note!
About my posting style, yo. Newest post will be first until updated and then they'll be in chronological order following that. So I no one gets confused.

Notices, yo.
Won't be a post this week, again. Kitchen is under construction.
[11/25/12] Yes, it's been over a year since construction started, but, you know, we have to work within our financial constraints and pay attention to things that take priority.
Our stove, including the oven - thankfully, is functioning. The sink works, but the pipes don't stay together. My griddle is still griddling, though my nephew broke the legs a bit and so on. We don't have any real cooking or baking or eating materials.
Is it ideal? No. Is it sanitary? Heck no. We're working on it.

August 21st
It's 5 am, and I'm starving~ Fall semester starts next Monday. Our kitchen is nowhere near being finished. stressed
So what does any logical, starving frustrated young woman do to pass the time?
Look at food blogs of course. The minimalist baker is a fairly new and salivation inducing blog. I might do a review later.
But thats not what I'm posting for! This is my food blog (of sorts), and as much as I would love to gush about someone else - it's time to sate my imagination.
It's a step in the right direction. ________________________________________________
In my head, I've got a Easy Lunchbox, just waiting for my edibles to be loaded into it.
Today, the menu has no main course (the problem), but it has a delectable side.
This recipe will have no quantities because, well, I'm not actually making it.
Easy Peasy Tuna Salad
Canned Tuna Mayo Frozen Peas Carrot (Preferably baby, shredded) Salt & Pepper, to taste
Hard boiled egg (optional, diced or mashed) Relish or pickles (optional, I favor sweet relish)
- Sub in canned/roasted/poached/boiled/whatever chicken, for a nice change of pace - Serve with crackers, bread or toast - Add cheese on the slide, a la Tuna Melt, without the melt - lightly steam the shredded carrot and let cool, for less of a crunch - If serving immediately, make sure the peas are defrosted or cooked and cooled before adding - frozen peas will help keep it cool until lunch and defrost by then
Or, if its the main course
- Serve on bread, soft tortilla, or lettuce to make a sandwich or wrap - Add sliced veggies and fruit on the side, for a full meal
Ideas? Tips? Suggestions for a main course? Think it'll taste good? My brain does; my (empty) stomach agrees. yum_tuna

More chicken! Winglets this time. Shells with cheese sauce and broccoli.
Wensday!
Grilled porkchop Moar brown rice Carrots with french salad dressing and a teaspoon of plain yogurt mixed in. [Better than I thought it'd be]
Thursday!
Chicken again! Breasts once more. Shells and cheese with broccoli By request of my bf.
Friday!
Made my brown rice freezer reserves for the next week and tried to make Soboro. Didn't follow the recipe though. sweatdrop It's for the rice really. Bf says its too bland... Which it is. Working on it. I don't know about you guys but I love the smell of ground beef and cinnamon for some reason. Love it.

||Week of: Sept. 19 - Sept. 22||
Monday!
Ramen with cheese Bologna and cheese sandwich
Was super hungry that day - also had a slice of pepperoni pizza.
Tuesday!
Winglets - Grilled Shells with broccoli, cheese sauce and soboro
It was awesome. Shared mine with a friend cuz she had no money for food and because the soboro made it a lot more filling. Didn't need to eat as much.
Wensday!
Pork chop - Fried Veggie fried rice
Finally found something to do with the brown rice and get my veggies at the same time!
Thursday!
Beef - Grilled Veggie fried rice with soboro
Drago requested the rice again, this time with the soboro and it was awesome in a whole new way

October 24th
Kitchen's still a barren wasteland, yo. But, I managed to get in and make a sandwich real quick (even though I'm not supposed to. I'm soooo tired of takeout and I've put on so much weight from it. Not even cool, yo.)
Any way, I made a grilled cheese on a croissant for breakfast. But I was feeling creative and Drago had left half a bag of organic broccoli (florets, I believe they're called) at my house so I grabbed a few.
Grilled cheese with broccoli
1 Croissant, cut lengthwise 1/2 cup of cheese(s) or 2-3 slices of cheese of your choice 2 - 4 broccoli spears, cut into quarters, smaller ones preferably. Seasoning to taste; I used garlic powder and Italian seasoning this time
*As per usual, I use a Foreman's Grill but this can easily be adjusted to work on a stove top and frying pan. Probably. *
Place croissant halves on grill for 1 - 2 minutes to heat through, not necessary but it helps the cheese melt faster. If you haven't rinsed and cut up your broccoli, do so now. If desired, you can throw the broccoli in the microwave for 5 - 30 seconds to soften it up a teeny bit. Now pile all your cheese onto one side of your bread, both if you're feeling adventurous and pile the broccoli on top of that. Assemble your sandwich and stick it back on the grill for another 2 - 3 minutes or until cheese is melted to your liking.
It was a very interesting sammich for me. Gooey, cheesy goodness and tiny pieces of green nutritious things. The broccoli was quite refreshing. And it was a nice change of pace from all the takeout, even if it was only breakfast.
Why won't the coding work? emo

This'll be my little vent spot for now.
Weekend of: November 4th
There are so many things I want to try!
Leave it to me to feel creatively culinary when I can't do anything about it.
I've recently discovered what a stromboli is, and how it's different from a calzone. I've never had either but, I really want to try making a stromboli for the family.
Once I get the hang of it, I'll try making mini ones for my bento.
It sounds like a good idea because it's a 'base' recipe. You can build, change and customize it however you want.
I want to experiment with more veggies. Recently, I learned that bell peppers, aren't really peppers and lack the chemical that would make them spicy. However, I am incredibly sensitive to even the smallest amount.

This'll be my little vent spot for now.
Weekend of: December 11th
I should be working on my final project and studying - finals start next week. However, I can't.
Skipping a very angry and pointless rant, I haven't found much I want to try. But I'm sure once the semester is over, that will change.
I came across a pretty good sounding broccoli recipe the other day. The recipe calls for powered peppers though... I figured I'd take it slow with the pepper if I ever get around to trying it.
I think its best to work up to my limit - I'm sure I won't have to go far - rather than burning the taste buds out of my mouth and regretting it later. sweatdrop

January Friday the 13th
Last weekend my friends, Drago and I went to the mall. There was a sushi place that 5 of us went to - there were 18 of us total. No questions asked, security followed us around the whole time, lmao.
Anyway I had vegetable tempura, and my girlfriends had a whole variety of things but Drago had this super awesome sushi. And he shared. emotion_bigheart

I forget what's in it exactly, soy paper, avocado, eel and/or shrimp. It was so good~
My friend that's allergic to seafood had sweet potato sushi and it was delightful. I was gonna get it but she got it first and we were all sharing so I figured having 2 at the table would be pointless.
Moving on! It's been like 3 months and the bathroom and kitchen still aren't finished. On top of that, my bedroom needs to be remodeled this month. Nothing's getting done. stressed
I'm breaking out the foreman's grill and gonna disinfect the shitake mushrooms outta it. Literally. emotion_puke
Classes start at the end of the month and I am still hunting for new bentos.

January 25th
I'm getting a griddle cuz fcuk all of this nonsense. I googled its uses and some people make their own english muffins on them. It's pretty cool. Link to page.
One comment points out the Japanese use of griddles to make Okonomiyaki emotion_yatta
Am also looking into a toaster oven, but the one I was interested in has a history of exploding. No Thank You.
So, the semester starts on Friday, the 27, as usual I don't have Friday classes. So, I'll be doing laundry and trying to figure out a way to make my rice/pasta without a stove. stare

March 2nd
So, yea... I brought a griddle. I was having a right ol' time eating, finally. Until they actually got around to remodeling my room. Its like living in a shoebox now; cold, drafty, no natural light, but its mine. The biggest downside - I have no surfaces.
Pulled out the griddle to make a omelet - on the floor, awkwardist thing I've ever done, after middle school. Spilled most of the only egg in the house. And the sponge has gone missing now! I don't want to cook on it if I can't clean it. emo
And Drago's gone insane. lol First world problems~
Anyway, the only bento I got too make with it was beef, white rice, tamagoyaki and veggies.
I used the tamagoyaki recipe from Just Bento, and used equal parts water and soy sauce (on approximately the soy sauce measurement) and found I liked it better this way over the recipe way when I tried it again.
