I looked it up on Gatherer but I couldn't find anything on them being human or not. If so, it's going to be a super sick card in a white/green Innistrad human deck.

I don't think the tokens she makes are humans.. I mean on the scars of mirrodin soldier tokens, it just says soldier.
And since it doesn't state anywhere else that its also a human, it shouldn't be a human?

Zennarion is correct. They are not. Though it would be nice if they were, tokens are only the creature type(s) in which the generator or erata says. A quick search on the gatherer also tells me that there is no human soldier token generator either
