this is a simple recipe for colourful rice i found on justbento a couple years ago. ^^
Coloured Rice
~Pink or Purple Rice~
For every cup of rice:
1 tsp - 1/2 tbsp finely grated red cabbage
a few drops of lemon juice
1/2 tsp vegetable/olive oil (optional)
pinch salt
Grate cabbage as finely as possible. (The more you use, the darker the colour will be.) Add a few drops of lemon juice to the grated cabbage a little at a time. (It will turn redder and redder.) Mix cabbage with salt and oil, and spread on top of rice. Cover and microwave on high for 1 minute. Mix together very well (the result won't taste cabbage-y at all, and the lemon juice adds a sour note like sushi rice).
~Green Rice~
For every cup of rice:
1 tsp frozen green peas
1/2 tsp vegetable/olive oil (optional)
pinch salt
Put peas in a small bowl and microwave for 30-40 seconds to defrost them. Mash them up as finely as possible with a fork or a mortar and pestle. Mix the peas, salt, and oil with the rice, and microwave on high for 1 minute. Mix together very well.
~Orange Rice~
For every cup of rice:
1 tbsp finely grated carrot
1/2 tsp vegetable/olive oil (optional)
pinch salt
Grate the carrots as finely as possible. Place on top of the rice with oil and salt. Cover and microwave on high for 2 minutes. Mix together very well.
For every cup of rice:
