i have alot of recipes, so i figured i'd start posting a few. this one comes from the manga cookbook. ^^ Oshinko (Pickled Veggies) 2 large cabbage leaves 1/2 cucumber 1 tsp salt juice of 1 lemon (optional)
Shred the cabbage and cut the cucumber into thin slices (you could use a cutter to shape them after slicing for extra-cute pickles), then put in a ziplock bag. Add salt and lemon juice, closing and shaking the bag to coat the cucumbers with the mixture. Squeeze the bag to make sure the cucumbers absorb the flavour. Place in the fridge, chilling for at least 10 hours before serving.

I've wanted to pickle veggies, but I'm a little iffy over it. Not too sure I would like them. However, I'm curious. Have you pickled anything other than just cabbage and cucumbers?

omg this sounds awesome 4laugh our family buys pickled veggies in the can all the time but where i want to go to uni it might be hard to get my hands on those... ninja i'm totally saving this recipe! ^^

I am pretty sure that I have mentioned this before, but there is a really good book called Easy Japanese Pickling in Five Minutes to One Day. I love it. The author is Seiko Ogawa and the ISBN is 9784889961133. I've made about a dozen things from it and they have all been delicious. You can also use it as a guideline. Such as instead of asparagus, use green bean. Happy pickling!

Lorie Bluteau I've wanted to pickle veggies, but I'm a little iffy over it. Not too sure I would like them. However, I'm curious. Have you pickled anything other than just cabbage and cucumbers? no, i'm afraid i haven't. ^^; haven't been adventurous enough, i guess. but i imagine bell peppers would pickle well; they're juicy like cucumbers, but they have a sweetness that might be nice. after all, if pickled plums taste good, picked peppers likely do too. :3p o m m e - p a n omg this sounds awesome 4laugh our family buys pickled veggies in the can all the time but where i want to go to uni it might be hard to get my hands on those... ninja i'm totally saving this recipe! ^^ glad to know someone appriciates the recipes i put in! (i was worried no one would. :[ ) be careful about how much you mix it, though, if you don't mix it up enough there'll be too much salt on some (i hate it when that happens). if the veggies your family gets are picked in the american way, though, they'll taste different from these. make sure you test it before you commit. ^^;
