Starting off with some weight loss specific ones, because there were some questions related to these recently:

A Calorie Is A Unit of Heat, NOT A Unit of Food: This came up recently in one of the threads, so I wanted to link to it here for everyone's perusal. VERY useful information to have.
The Truth About Calories: This is the post referenced in the previous link. Explains the importance of tracking what's actually in your food, rather than the food's calorie content.
