I love doing it and I love pleasing my girlfriend, but when i'm going down on her and she orgasms just once... she instantly wants me to stop because the sensation is too great and she pushes me away.
I just wanted to know if this is normal? Am I doing something wrong? Or am I doing everything right.

Yes, that's normal. Some women are very sensitive down there, especially right after an orgasm. That means that clitoral stimulation may be very uncomfortable or even painful for them right after an orgasm.
