A lot of Christopher Hart's books are helpfull for a beginer. I used them for a while, but his art is not terribly good. It makes you feel like you don't want to learn from his books because you don't want to draw like him. However, if you can look past this, he does have some good tips and tricks for drawing. He is actualy a good artists too, I think he just didn't put as much time and effort into the books as he should have. Anyways, They are still very good books for beginning artists.

To be honest, just about any book can be useful for art. I haven't used a "How to Draw" book in years though. Those are helpful for beginners and are easiest to understand when drawing animals.
When I draw animals I always use informational books like the Nature's Library series or encyclopedias on specific species. Informational books are great because the content gives you a better feel for what you are drawing and might give you more creative ideas.
I also use books for inspiration. I like to buy books on Folktales to get me into a positive mood for drawing fantasy. I also collect Amy Brown books and other collections from various Fantasy painters. They also spark good inspiration.

The SS (Style School) Magazine books are really good too. They have parts that show you how to create things, and parts that show other peoples art to inspire you. I find these books extremely helpfull and inspiring and hope to someday own them.
