Ingredients
3c. Niko Niko medium grain rice
3.5c Water
1 Whole Cucumber
10-20 skinned & cooked Shrimp
1pk Nori Wraps
1/2c Oil (you can use any oil its just for your hands)

Optional
1 Tb Toasted sesame seeds
1/2c softened cream cheese with chives

Makes- 15-20 depending on the size

Directions

Start by washing the 3 cups rice by running water through it and draining until water comes out clear. Put 3 cups water and the washed rice in a medium to large saucepan on HI heat. Once a roaring boil starts boil for one minute cover and reduce heat to simmer and cook for 20mins.

While water is boiling peal Cucumber and cut into slices length wise. Make slices fairly thin. Cover bamboo mat with stretch tile and place a sheet of Nori, shiny side down, on the newly covered mat.

If using Cream cheese place it in microwave for 15-20 seconds or until mushy.

Take Rice off heat source and let cool with lid on. Once cool rub oil on hands and begin grabbing the rice cover the Nori in a thin layer. Place Cucumber and shrimp length wise at the bottom of your Nori. With clean hands begin rolling the Nori. When rolling put pressure on each roll in a circle shape pulling back the bamboo mat as your going.

Once rolled cut & serve.

Best eaten fresh but will hold up over night. Not as tasty though.
Next idea is to make a sweet sushi roll. I have fruit on the brain.
