Now I know there are benefits to both.
Spreads give structure to readings and makes it easier to select which of the many possible meanings of the cards to apply. However, it can be difficult if something that totally doesn't seem to fit shows up or seems ambiguous. It seems to be the more logical style, but still allows for a bit of intuition.
Open Readings offer no structure, but allows for a more fluid process, sort of like telling a story, one card leading to or expanding upon the previous ones. It seems to be the more intuitive of the two styles here, but still allows for logic if you read it in a linear way.
I'd like to know peoples' experiences with these two different types of readings. If this is the wrong place, then it can be moved if needed.

I rarely do spreads anymore. When I was first starting out, I collected all the spreads I could find, and I still have a list of ones that I like using and add to it when I come across something interesting. But I've found I like the more free-form style, and tend to adapt and add to the reading even when I start off using a spread. I'll do it as written, then want clarification on something and start a new but related reading off to the side of the spread to make sense of it or cast it in a different light.
If I'm reading for other people who are with me in person to see what I'm doing, I usually will at least try to stick to spreads, though. I think the added structure can be comforting for people and gives me an easy way to explain what the cards in each position represent.

The only spread that I really work with anymore is the mirror spread for when I'm working with two people, simply because it keeps the two energies apart and pretty organized readings.
Most of the time it's open because I feel like some structures make the "cause and effect" rather than the insite side of tarot dominate. I'd rather the person leave with a little more awareness, than a structured "This is this" kind of reading. It's very limited, and as you said before, some cards just dont' mend to the form. Some cards don't even hold significance in the form, but still play an important role with the person.

I honestly use spreads a lot more than non-structured readings. I think using a spread as a "base" around a subject, then later adding cards as needed. I support both ways though.
