I've always hated the name of this stressed but its actually tasty on scones, toast, etc~ An easy recipe from All Recipes

Ingredients (8 servings)

* 1 cup heavy cream
* 1/3 cup sour cream
* 1 tablespoon confectioners' sugar

Directions

1. Using a whisk attachment on the mixer, whip heavy cream until stiff peaks form. Remove from mixer, and hand whisk in the sour cream and confectioners' sugar until just combined. Store in refrigerator.

Do you know if this is what they use for the filling in the Japanese Christmas cakes?

Hmm, well first you have to realize any sort of baking like this in Japan was taken from European countries, so feel free to look to England and especially France for inspiration here!

Japan typically makes cakes of red and white for christmas and upon some further investigation, it seems they usually use a sponge cake recipe. One site I saw described these holiday cakes as glorified strawberry shortcakes and I think that's pretty accurate.

Clotted cream is typically used mostly as a spread in tea party situations. I'll hunt down a nice recipe for strawberry shortcake and post it up later 4laugh You sure like planning things ahead dontcha! Good for you 3nodding

Yeah, I like to plan ahead when it comes to fancy stuff. I only grocery shop about twice a month, and I plan typical meals two weeks in advance and parties usually a month or two a head of time, sometimes more depending on how many people I expect.
