Samhain Recipe

Pumpkin Ginger Soup

1 small cooking pumpkin
1/2 cup cashews
1 tablespoon grated fresh ginger (or to taste)
salt to taste

Soak cashews in water to cover for several hours. This step is optional, but helps them blend better. Cut pumpkin in half, remove seeds, and bake cut side down at 350 degrees F until very tender (45 minutes to one hour). Scrape pumpkin from the peel and purée in a blender, with any juices, in batches. Put puréed pumpkin into your soup pot. Blend cashews in blender until smooth and add to the pumpkin purée. Rinse the blender with a little water and add to the pot. Add a little more water if it’s too thick. Add ginger and salt to taste and heat gently for a few minutes to blend the flavors.

Beltane Recipe

Lavender Herb Bread

1 pk Active dry yeast
1/4 cup Warm water
1 cup Low-fat cottage cheese
1/4 cup Honey
2 TB sweet Butter
1 Ts Dried lavender buds
1 TB Fresh lemon thyme
1/2 TB Fresh basil; finely chopped
1/4 Ts Baking soda
2 Eggs
2 1/2 cup Unbleached flour
Softened Sweet Butter (for top)

In a small bowl, dissolve yeast in water. In a larger bowl, mix together the cottage cheese, honey, butter, herbs, baking soda and eggs. Stir in the yeast mixture. Gradually add flour to form a stiff dough, beating well after each addition. Cover and let rise about 1 hour, or until doubled in bulk. Stir the dough down with a spoon. Place in a well-greased 1 1/2 or 2 qt. casserole or ten 4" individual pie tins. Let rise 30 to 40 minutes, or until doubled in bulk. Bake at 350 F. for one hour for a large loaf, 20 to 30 minutes for small loaves. When done, turn onto a rack, brush top(s) with soft butter, and let cool.

Yield: 1 large round loaf or 10 individual dinner rolls.

Witch's Brew

1 Gallon Apple Cider
1 Apple sliced
1 Orange sliced
3 Cinnamon sticks
3 slices of ginger
1 handful dried rose petals
1 Tbs Nutmeg

Pour the apple cider into a large pot and then add rest of the ingredients. Simmer for 2 hours. Serve. You can either strain the contents or just put some in a mug.

This is delicious and perfect for Samhain!

Cooked Beat Salad

Cooked salads are not to common in the Americas, but they can be wonderful.

Ingredients:

Salad:
~5-7 Beats - preferably the deep red kind
~2 Yellow Onions (the type just means slight flavor differences)
~4-6 Handfuls of Spinich

(optional) Dressing:
1part Balsamic Vinegar
1part Olive Oil
1/2part Honey

Directions:
Roast the Beats in the oven until they become tender to the touch (or microwave them for 2 minutes on high.) In a pan saute the onions until they begin to brown (add water as needed). Take the Beats and halve and quarter them so that they are all the same size. Add them to the pan. Once the red dye of the beats completely encompasses the onions, start to cook down the spinach (continue to add water to prevent burning and to steam the spinach.) Once everything has cooked nicely, you will have a wonderful array of dark red beats, deep red onions, and bold green spinach. You now can salt to taste and eat it warm without the dressing.

Eaten Cold:
This is where you would add the dressing. Let your salad cool in the fridge or at least to room temperature. Mix the vinegar, oil, and honey in a small mug or ramekin. Top the salad with the dressing and dig in. (you may add dressing to the warm salad but the warm vinegar is an unsettling smell for most.)

Samhain:
Apple Bread

1/2 c. margarine
3/4 c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. soda
1/2 tsp. salt
1/3 c. sour milk or orange juice
1 c. chopped cooking apples (no need to peel)
1/3 c. chopped walnuts

In mixer, cream margarine and sugar. Add eggs and vanilla. Combine flour, soda and salt. Add to mixture and alternate with liquid. Add apples and walnuts. Turn into greased 9x5 loaf pan. Bake for about 1 hour at 350.

Beltane:
Elder Flower Fritters (Medieval England)
From Wisteria's Faery Recipes
The French use elder flowers to pack apples. They claim that this enhances the flavor.

1 egg
1 cup self-rising flour
1 teaspoon Rose Water (see following recipe)
1/4 teaspoon cinnamon
1/4 cup honey
2 cups elder flowers, freshly picked & cleaned
2 tablespoons brandy
Mix the egg, rose water, honey, & brandy in a medium sized bowl. Stir in the flour & cinnamon; the batter should resemble slightly thick pancake batter. If the batter is too thin, add a little more flour; if too thick, add more brandy. Fold in the elder flowers. Fry like pancakes or drop by the teaspoon into a deep-fat-fryer until golden brown. Serve with a sprinkling of orange water & fresh lemon, or dip into fresh sweet cream.
Yield: About 2 dozen
Note: If you are not using self-rising flour, add 1 teaspoon baking powder & 1/2 teaspoon salt.
Variation: If you can't find elder flowers, substitute 1 cup finely diced apples & a hint of fresh mint for similar magical effects.
Magical Attributes: Protection from Faery folk, trust, beauty, energy for attraction, & magical ambience. Can also be eaten on Lammas, St. Valentines Day, or Hallow's Eve.
