My family is from Kyoto, Kobe, Nagasaki... But most of the recipes we have are pretty boring.
My favorite thing that my family makes can actually be bought as a souvenir in Kyoto! It's Yatsuhashi~
These kind of take a long time to make and a lot of effort, but they taste great ♥
Rather than Cinnamon, you can also make these to be green tea or any other flavor!
These can be baked or not, but I have never really tried to bake them...
Ingredients:
1 cup glutinous rice flour
(or Mochiko. You can usually get this at an Asian marketplace.)
3/4 cup water.
Sugar (white or brown) to taste
Ground cinnamon to taste + some extra for powdering.
Potato starch or extra rice flour/Mochiko for powdering.
Red bean paste (Asian market place)
So, to start out, mix together a cinnamon mochi!
In a bowl, mix together the Glutinous rice flour/Mochiko,
Some sugar, the water and as much cinnamon as you like!
Mix this until it becomes thick and sticky.
You might need more or less water.
If you put too much water, just stick it in the microwave for a few seconds, and it will absorb!
Time to let the cinnamochi cool.
Heat up your stove and boil some water.
In a bag, or separate pot (Like a double boiler.)
Mix some sugar with red bean paste.
Leave this in the boiling water for at least 30 seconds so the paste and sugar will melt together.
Let sit to cool.
(If you don't like red bean paste, melted chocolate makes a delicious substitute.)
Next, pat your hands with some extra flour/Mochiko or Potato starch.
This part is going to be very sticky.
Also, cover your surface area and rolling pin with mochiko or potato starch!
Lay down the cinnamon mochi on your surface, preferably in a wad.
With a flour/starch coated rolling pin, flatten it out.
(DO NOT TOUCH IT IF IT IS STILL HOT!
It can stick to you and burn you really bad.)
Cut squares out of the flatted mochi and spoon a few drops
of your sweet bean paste in the center.
Fold it closed in the shape of a triangle!
(You can trim the edges up to neaten it up.)
Just sprinkle with extra cinnamon and sugar and you are set!
Make as many as you want, some people like them bigger
and thicker, I usually see them very tiny.
-Yatsuhashi like to stick together, so seperate them with saran wrap or napkins!
-They are better frozen as heat and humidity will melt them and make them sticker.
In the case of green tea, you can switch the cinnamon with Macha/Green tea powder!
Some other fillings besides Red bean paste and Chocolate are:
Peanut butter
Jelly
Fruit slices
apple sauce
candy
Icecream
