I made banana fritters this morning! Added cinnamon and vanilla extract tho whee Turned out pretty good! I also seem to add at least 1/3 C more of milk for the batter to be the consistency I like. Pulled from here. Experiment with different types of fruit!

Ingredients:

* 1 2/3 cups all-purpose flour
* 2 teaspoons baking powder
* 2 tablespoons confectioners' sugar
* 1/4 teaspoon salt
* 2/3 cup milk
* 1 egg
* 3 bananas, mashed and sprinkled with 1 teaspoon
* lemon juice to keep from discoloring
* oil for deep frying
* confectioners' sugar

Preparation
:

Measure, sift and mix all dry ingredients. Whisk together the milk and egg; add to dry ingredients. Fold in the mashed bananas. If too thick add a little milk, and if batter seems too thin, add flour. Batter should have consistency to mound up in a spoon. Heat deep fryer to about 375° or add 1 inch of oil to a deep skillet or kettle and use a deep fryer thermometer to check temperature. When fritters will cook in 5 minutes, the oil is ready. Drop by spoonfuls in small batches. As fritters brown on one side turn. Drain on paper towels. Keep warm and just before serving sprinkle with cinnamon sugar or powdered sugar. Serve warm with syrup, if desired. Serves 10 to 15.

They got raving reviews from my bf and his buddies 4laugh I definitely suggest the addition of cinnamon and vanilla, otherwise it might seem too bland to me question Maybe some other stuff too... I shall experiment and add here 3nodding

I just made the same recipe with strawberries and it also turned out well! I omitted the cinnamon and just added two caps of vanilla, but I think I'll add more next time :B We've been dipping them in maple syrup but I think I'll make chantilly cream next time for the strawberry variety 3nodding Pastry cream is so gooood heart

So now that my house is obsessed with fritters for breakfast rolleyes I have decided to make ultimate, gourmet fruit fritters! Here is a guide to my potential master pieces;

Banana Fritters:
arrow Vanilla extract
arrow Cinnamon
arrow Pecan pieces

Dip - Maple Syrup


Strawberry Fritters
:
arrow Almond extract
arrow Almond slices

Dip - Chantilly Cream

I haven't made them with nuts yet, and I'm a little anxious about them sinking to the bottom of the batter, but we'll see 3nodding

Do the strawberry fritters need the almonds? I hate almonds, they make me ill scream .
