2-HOUR PICKLING
Ingredients: 1. Green beans (Enough for 4 medium size portions) 2. 1/4 cup water 3. 2 tbsp sugar 4. 1.5 tsp salt 5. 4 tbsp vinegar (not heavily seasoned, w/ garlic is good) 6. 1 tbsp lemon juice 7. 1 small garlic clove (pressed) 8. 1/4 onion (whatever is seasonal) 9. Lemon slices
Process: 1. Blanch [quick boil] green beans. (5 minutes uncovered) Spread out in a colander to cool. Cut in half. 2. Boil water, sugar, and salt. Once simmering turn off heat and add vinegar and lemon juice. 3. Add onions and garlic. 4. Prepare a jar or bowl large enough to hold liquid and green beans. 5. Place cooled green beans in jar or bowl. 6. Pour liquid over beans. 7. Mix together and then place in the fridge for 2+ hours.
Note: The original recipe is with asparagus, but I do not fancy them. The green beans were good.

I may have to try this recipe. I'm not horribly fond of green beans as they are usually cooked, but this looks like something different I would like.

Morbereth I may have to try this recipe. I'm not horribly fond of green beans as they are usually cooked, but this looks like something different I would like. You can add to the liquid any other vegetables you like as well. Just make sure they are raw and fresh-cut. Carrots can add a little bit for sweetness, or jalapenos for a bit of a spicy flavor.

Sailor Blue Rose Morbereth I may have to try this recipe. I'm not horribly fond of green beans as they are usually cooked, but this looks like something different I would like. You can add to the liquid any other vegetables you like as well. Just make sure they are raw and fresh-cut. Carrots can add a little bit for sweetness, or jalapenos for a bit of a spicy flavor. I think we are growing green beans in our garden this year. I may wait until we start harvesting to try this. Looking forward to it, though. I like a bit of pickles in my bentos, or just for a snack.

Just been too busy travelling. It's normally a freezer-stash item for me. I've got some tuna with jalapenos that I want to use as filling for the next batch.
