yup thats true. prety much to make chease if i rember right you let milk go bad and scrape the curd off of the top of it. and prety much let it mold untill it is chease. (of course you add differnt things to it for differnt cheese) that is why when you have a block of cheese and you get that mold on it, it is ok just cut the moldy part off of it and the rest is still perfectaly fine ^.^
