The gods often have some general features of their appearance that they're remembered for (and their children often inherit)-- hair colour and eye colour, for instance. But we know that they can change forms. Hestia appears as a human form with a few different ages throughout TLO. While Artemis always stays her 12-year-old human girl image (with the possible exception of becoming giant to fit her throne), but she tells Percy that she could appear in any shape she wanted, such as a column of flame.
So I wonder if a little bit of this trait is passed on to the demigod children. Obviously, it wouldn't be some major power to learn and control at will, and probably most people wouldn't even realize. But I wonder if it's hinted there.
Poseidon appears in a few different male human forms, keeping the same eyes, but we see that depending on the state of his realm this varies (usually by changing age). I noticed that the characters who RR mixes up the appearances of are all demigods who undergo a signifigant change.

Silena Beauregard had a lot of conflicting things said about her appearance. This fits because she was a spy and a hero, and was constantly plagued by new developments that would affect her choice in the end, and probably changed sides or re-divided sides in her head several times.
Thalia is always described to have short, spiky black hair, freckles, and bright blue eyes-- except for the very first time she was introduced in SoM. Percy saw her in a dream, and her eyes were green. I think this fits with her later decision to become a huntress, which majorly changed the plot/prophecy and represented the change in her (joing the hunters was sort of a final formality of saying goodbye to Luke and Annabeth).
Clarisse La Rue, always described to be big, and strong, with long dark brown hair and eye's like her father's (the colour is never specified). Except once when she is said to have short blonde hair. When we first meet Clarisse in LT, she is no more than a demigod Nancy Bobofit. But after quests and meeting Chris and Silena, Clarisse doesn't just grow up like Annabeth and Percy do. Her personality changes.
Annabeth and Percy, who have the same personalities throughout the series (the only differences being when they're younger and older), are always said to have the same appearances.
The only exception is in TC when they both get grey streaks in their hair that magically disappear before BotL. This is probably their appearance reflecting their health, which is normal and I don't think counts as a change.

Oh geez. I didn't know RR made that many mistakes! That tells me I should read the series again-after I finish my growing pile of books.
And I really don't think he did it on purpose. I bet he just keeps messing up.

If that were really on purpose, he'd have said something about it at least in the guide if not the actual books.
Chances are, RR just has a stupid editor. I put my little theory up here because that changing idea seemed to be an interesting thought :/

I nearly ate my shoe when I noticed the thing about Thalias' eyes. But, I agree with Luna's 'stupid editor' thing.
Some of the stuff may have been changed because the times that they were mentioned were tiny, and RR completely forgot, and his Editor didn't make note of it.
