should we just fight by typing or this point system by rolling the dice? (or random number?) like a set value for health and this subtracts from mana.

no, explain what your character is doing. for example i will show a fight sequence, but you would only do what your character does, sees, feels, hears, etc...
Bobby Lee pulled out his hand blades and quickly started bouncing around trees. He saw how his opponent continued to look about, always one step behind him. "nows my chance" he said to himself as he rushed the ork, claws going through its flesh
[Game] The Ork howled in anger as it was torn apart. Though the blow was not fatal, the Ork could no longer move fast or swing hard, to to the absence of flesh on either side of his now visible ribcage.
Though do remember if this was a real game, you would have limits and you will "level up" when i put an announcement so you can go longer with spells before i stop you, and you will have a set amount of health that will go down, but all that will stay secret from you
i will do game stuff, gm's unless you become one, etc...

so... youre be playing the part of the actual game and tell us like our health and power and stuff?
thats a good idea... or else we could just level up when ever we wanted

yah, i'll be sure to make it fair, and not like to get to level 2 you only get to kill 1 monster, but for level 3 you have to kill OVER 9000( i know, the reference is a bit late)
