Well Bebop is my fav of all time but other animes I greatly enjoy are Lupin the 3rd, Burst Angel and Samurai Champloo.

Monster is my 2nd fav! I also adore Gankutsuou and the first season of Saiyuki. Mononoke (The TV show) is also gorgeous but too short. Oh, and for comedies, I like Maria Holic and Baka to Test to Shokanju.

I enjoy lots of animes besides Cowboy Bebop such as...Ruroni Kenshin, Death Note, Bleach, and Kiba. Now Kiba is a very awesome anime that for some reason alot of people don't really know about. I highly suggest at least looking up the first episode of that one.
