So I made maple chicken tonight and it was SUPER YUMMY. I massaged the skin of the bird with olive oil and salt/pepper, then rubbed maple syrup, rosemary and thyme (I think it was thyme) under the skin... Then I turned the oven to 450, popped the bird in and let it cool to 350. About 20 minutes later I added a mixture of brown sugar, cider, more syrup and honey and basted it. I popped the thermometer in it and just cooked it until it was 185 degrees inside.
I cook my chicken in a little clay pot and it stays REALLY moist and perfect, omg, yummm. The gravy was realllly sweet and good on both potatoes and sweet potatoes.
