I would have to say the third & the seventh boss in RoboTrek for the SNES Big Eye and De Rose... it was memorable that I could finally defeat them without the help of my big brother the very first time.

Aphrodite from FFL2 it took me forever to defeat her.
then springs to mind "a floating man" boss from the game RED Faction (1) i had to use cheat codes to defeat him and even then it took a ton of missles to finally defeat him.

The colossus from God of War 2, because the boss was actively prevalent throughout the entire level!

In...I believe it just called Spiderman, for the PSX the last boss. Dr. Octopus wearing the Carnage Symbiote. That was a freaking hard runaway boss...not to mention scary seeing titanium symbiote clad octopus arms attacking you.

It's weird to just say that one boss is the most memorable. I will however say that the first colossus from Shadows of the Colossus was just trippy. The boss was the entire level I was just in awe.

I'd have to say Manah as a corrupt memory of her childhood in Drakengard 2 was a horror. I played the scene at night, almost crapped my pants, and had to try more than just a handful of times to get her down.

Kefka. It took me about 12 year to beat him. Ruby Weapon till i realized i had to kill two of my team mates before the fight.

Andariel from Diablo II. First PC game I tried playing as a sincere gamer back in ...2008. Ah, so long ago xd . I had grown tired of anime and manga and was ready to move on to other hobbies. I chose gaming. A friend from work decided to "teach" me how to play the game (mostly by stealing all the good loot, then laughing as I got my butt kicked after equipping the cruddy armor and sword). After we finally defeated Bale at the end of Lord of Destruction, I remember going back and killing her in one stroke lol . My friend was obsessed with not dieing during normal mode, I found out why when we moved on to Nightmare difficulty. Sadly just after we were rushed through Nightmare (well, my friend was, I was too low a level to advance to the Nightmare level of Bale), I had to stop playing and focus on staffing the Geek.Kon convention. I haven't played since, but my main character, Narn the Barbarian, is immortalized in my City of Heroes toon of the same name.

Another memorable boss would be the second battle against the boss Chamelan from NiGHTS: Journey of Dreams... it took me practically forever to beat this guy since he was hiding pretty good.

ok I might be revealing my geekness here but who cares.
Right now the boss fight that sticks in my mind most is Nomad from the online game Runescape.
He was the hardest battle yet in that game and he could do everything from reducing your hp to 1, to cloning himself, to healing half his energy.
You really have to use strategy with this guy rather then just a head on assault. I was so angry and frustrated with him for the longest time, so when I finally did defeat him I felt like I had really accomplished something.

A new memorable bosses fight for me is Ancient Demon Skeldritch the Sand Temple boss in The Legend of Zelda: Spirit Tracks and Rocktite also from The Legend of Zelda: Spirit Tracks when I was transporting Dark Ore.

Gizamaluke from Final Fantasy IX. It's one of the first bosses and not really hard, but it took me 10 tries (and alot of cursing and sweating) to defeat it. Turns out I should have picked up another character - Quina - before the battle, so I fought it with 3 characters instead of 4... emotion_facepalm
