And to inaugurate our thread, I'd like to post a very simple and fun recipe:

MUGCAKE!!!! heart

Here's the recipe for the mugcake (yeah, that's right, mugcake, because it's made in a mug). I apologize for my bad English.

Ingredients:

1 small egg
4 table spoons of milk
3 table spoons of oil (soy, corn or canola)
2 table spoons of powder chocolate (strait measure, flat)
4 table spoons of sugar (strait measure, flat)
4 table spoons of wheat flour (strait measure, flat)
1/2 tea spoon of powder baking soda (strait measure, flat)
A mug larger than 300ml and a fork to mix

How to prepare:

1 - Break the egg into the mug and beat it with the fork.
2 - Add the oil, the sugar, the milk, the chocolate and beat it more.
3 - Add the flour and mix it delicately until it's homogeneous. Then, add the baking soda and mix it slowly and well. The dough is softer and more fluid than the avarage cake dough. DO NOT ADD MORE FLOUR, or you'll get a hard cake.
4 - Put it in the microwave oven, at the maximum heating power, for 3 minutes. Don't be scared it if seems like it will overflow a little, it's normal.
5 - Decorate it, fill it, add fudge or whatever you want

Adding small chocolat chunks into the dought also brings an interesting result.

Oh I like this thread. I have millions of recipes (my mom and grandmom were chefs so I grew up cooking).

Let's see, I'll start with..... Brigadeiro!!!!!!!!!!!
______________

BRIGADEIRO heart

Brigadeiro is a brazilian sweet, it's highly caloric but sooo tasty. A true temptation and so easy to make ^^

You'll need:
-1 Can of condensed milk
-1 soup spoon of margerine
-7 spoons of melted chocolate or 5 spoons of powdered chocolate
-Chocolate grains
-Coconut shavins

How to make it:

-Place the condensed milk, margerine and chocolate in a pot.
-Cook it in medium heat, stirring it non-stop with a wooden spoon.
-Keep cooking it until the dough starts to unstick from the pot (never stop stirring!!).
-Let it cool a bit, then smudge margerine in your hands and start making little balls with the dough then roll them in chocolate grains or coconut (whichever you prefer) and let them cool completly.

And that's it, this awsome sweet is made.

Which reminds me... Is condensed milk easy to find the in USA? I know in Europe it's not, because some friends have told me already. Condensed milk is the base for many delicious desserts in Brazil.

Lemon - Meringue Pie- heart heart heart

-200g of butter cookies
-100g of butter*
-1 can of condensed milk
-3 large green lemons
-2 eggwhites
-6 tablespoons of sugar.

* Original recipe, I had to use 130g.

1) Dough:

User ImageUser ImagePre-heat the oven at 180ºC
Crumble the cookies (you can put them in a blender or use a food processor) until they become a thin flour. Take out the larger pieces, put them back in the blender / food processor to crumble them again, until all of it is thin flour.
Melt the butter.
In a large bowl, mix very well the cookie and the butter with your hands. It won't be a smooth dough, it crumbles easily.
With your hands, press this mixture into the bottom and borders of a pie baking pan, until all of it has the same thickness and all the surface is covered, to form the pie crust. Bake it for 10 to 15 minutes, until it's slighty golden. Take if off the oven and wait for it to cool down a little.

2) FillingUser Image

Extract the juice from the lemons.
Mix it slowly with the condensed milk. You'll notice the condensed milk will harden a little.
Fill the pie crust with it.

3) Meringue:
With a mixer or beater, beat the eggwhites until they're very firm (when you tilt the bowl, they can't flow). Slowly add the sugar, while still beating.
Cover the pie with the meringue, and use the back of a spoon to make little peaks all over it.

User ImageBake the pie at a lower temperature (around 150ºC), until the meringue starts to harden and become slightly golden (around 15 minutes).]

Take it off and wait for it to cool down.
If you'd like, you can decorate it with lemon peel scrapes.

Put it in the refrigerator and serve it cold.

Very easy to make, the hard part is cleaning up the mess later.

MY LASAGNA
Ingredients
1 pound sweet Italian sausage
3/4 pound lean ground beef
1/2 cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
1/2 cup water
2 tablespoons white sugar
1 1/2 teaspoons dried basil leaves
1 teaspoon Italian seasoning
1 tablespoon salt
1/4 teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
1/2 teaspoon salt
3/4 pound mozzarella cheese, sliced
3/4 cup grated Parmesan cheese
Directions
1)cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
2)Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt
3)Preheat oven to 375 degrees F (190 degrees C).
4)To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce(make sure noodles overlap slightly). Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
5)Bake in preheated oven for 30 minutes. Remove foil, and bake an additional 10 minutes. Cool for 20 minutes before serving

Family Recipe

Jalapeno Coleslaw heart -- Very easy
Makes 4 servings- Prep Time: 20 min.

8 cups Cabbage, thinly shredded
4 Green Onions, thinly sliced
1/4 cup Jalapenos, diced (add more or less for personal tastes)
3/4 cup Mayonnaise (I use Miracle Whip so either is fine)
1/3 cup Sour Cream
1/2 teaspoon Salt
1/2 teaspoon Celery Seed
1 tablespoon Mustard (Any Kind)
1/4 teaspoon Pepper
1 teaspoon sugar (sweeten to taste)
1 tablespoon White Vinegar
1 teaspoon Worcestershire Sauce
1 teaspoon Parsley, chopped

Mix all ingredients together in bowl until mixed well, cover and refrigerate well for at least 2 hours. Sprinkle with Parsley before serving.

Suggestion: if using Miracle Whip. Use 2 teaspoons Vinegar, 2 teaspoons Worcestershire Sauce, and 2-3 teaspoons of Sugar, due to the strong flavor of Miracle Whip. Pretty much you can adjust all ingredients to your own personal tastes. Only thing to be careful of is adding to much or the liquid ingredients, you don't want a runny sauce
