I like Daybreak's Bell and Stray from Gundam 00 and Wolf's Rain, respectively.
As for endings, I don't know if this counts, but when Toonami showed Gundam Wing, they put the first opening at the end of the show, and replaced the singing with a saxophone cover of the same song.
Aren't some of the musician's in VAMPS also from L'arc En Diel, the Band that did DayBreak's Bell?
There was a song episode exclusive in an episode of DMC. It was in the episode about the singer who was overcome by a demon. That song rocked. ANd so did the theme. And I liker the tone down of the closing. It seemed to change episode to episode.
