Okay, so I typically have a few regular meals that are really simple.

For lunch, I love to mince an onion, and spray it with balsamic vinaigrette. It's a brown and white spray bottle by Ken's, I believe.
The spray takes away some of the onion's acidity, without taking away the flavor and nutrients like cooking would.
Onion is a natural bacteria killer, so it's a very healthy lunch.


My favorite recipe is my Mediterranean orzo salad.
I cook half a box of orzo while mincing a full onion, then once the orzo is cooked and drained, mix the two. The heat cooks the onions very slightly, which helps the bitey taste.
I also mix in about a quarter jar of pitted kalamata olives, cut to whatever size is most appealing, and once the whole thing cools enough, add feta cheese to taste. I usually go for a half to full cup.
This meal lasts a long time, just cover and refrigerate any leftovers. The flavor's just as good, warm or cold!


Here's one that you can try soon with Halloween approaching: Fried Pumpkin Flowers.
When a pumpkin starts flowering, they're all male flowers, which simply die without doing anything. You can collect these as soon as they open.
Bread lightly and fry until the breading is crispy. I use olive oil.
These make a wonderful appetizer or light meal.

Oh wait, did I forget a breakfast option?
Well that's because I'm biased when it comes to eggs, which is what I recommend.
What you want are organic, free range (Not cage free) eggs, preferably a day or two old (store eggs are aged a week or two).
If you can get that - and you should, since supporting local farmers is good to do anyway - then just take two or three of those and mix them in a bowl.
Add a little pepper, onion, tomato, potato, herbs, whatever you like in your omelette. I cook in extra virgin olive oil.
If you really want, you can add a small strip of swiss cheese on top right before moving the egg over to your plate. Swiss has a lower fat content than a lot of other cheeses.
Add salt (I prefer sea salt) to taste, and enjoy!

I really do promote the use of eggs, meat, and produce from local privately owned farms whenever possible.
This will guarantee that you are buying fresher, healthier foods!

This is a little repeat from the "Do You Eat Healthy?" topic, but it's a sort of recipe.
You need a small can of salmon (Red sockeye is preferable), a little feta cheese, and some black olives (Kalamata olives also work)

Just drain the salmon and remove undesirable parts like skin. The bones are softened and edible. Empty it into a microwave safe bowl.
With a fork, mash the dry salmon until the largest clumps have broken down.
Then sprinkle a small amount of feta and add a few olives (pitted).

If desired, you may microwave for just a few seconds, just long enough to melt the feta.

This place is too quiet, so here's what I did yesterday.
3 fresh, organic, free range eggs (Not cage free, yes it makes a huge difference!)
Half of a poblano pepper
Olive oil, and a dash of seasalt.

I made a delicious poblano omelet. I didn't salt it past a little dash to the oil as it was heating up. It was amazing!
The poblano has a very mild heat and actually turns sweet when heated, so adding it gradually throughout the process then sprinkling the last on top gives you a very nice range of mildly hot and sweet throughout the meal.

This is my favorite breakfast: oatmeal with banana

Just make a single serving of oatmeal. I like to cook it in milk, sometimes soy milk. while it's cooking, mash a banana on a plate. then, when the oatmeal is cooked, put in the banana along with some nuts and cinnamon. It's the best way for me to settle my morning sweet tooth. =)

Peanut Butter Energy Bars
I love these! They are so easy to make and are really yummy! I usually eat them for breakfast, or after I work out. The original recipe had protein powder in it, but I usually leave it out when I make them. If you want it to be a protein bar, just add 2 cups of protein powder and and extra 1/2 cup of honey. I got this recipe from www.food.com.

ingredients:
• 1 cup of peanut butter, crunchy or smooth work fine
• 1 cup of honey
• 3 cups of uncooked oatmeal, flavored or unflavored

directions:
1.) Combine peanut butter and honey in a large nonstick pan and warm up over low heat until runny and completely mixed.
2.) Mix in the oatmeal, and protein powder if you are using it.
3.) Press into a 9 x 9 inch pan
4.) Let it cool, then cut into 16 equal bars
5.) Wrap each bar in foil, and store in plastic bags. You don't need to refrigerate them.

Oh, awesome! I am a fan of peanut butter, so stuff like this is great biggrin Have you tried mixing in nuts? Has it worked?

I haven't thought about adding nuts to it. :O I'm sure it would work though, because the mix holds together pretty well. The nuts would probably have to be chopped up pretty well though. That sounds like a really great idea though. ♥

Not my usual idea of a healthy dinner, but this worked surprisingly well. My friend gave me his recipe for beef masala.
This is an Indian dish, so expect spices!

1 onion
1 package stew meat (also called beef tips)
1 14 oz. can tomato sauce
1 pint heavy cream (I used half and half)

1 tbsp ground chili powder
1 tbsp garlic powder
1 tsp ground cumin
1 tsp curry powder
1 tsp ground coriander
1 tsp paprika
1 tsp Italian seasoning
1 tsp dried cilantro
1/2 tsp ground turmeric
1/2 tsp ground chipotle chili powder
1 tsp ground ginger

peanut oil (I used plain old vegetable oil)
red wine
Worcestershire sauce
soy sauce

As for the ingredients at the bottom without specific amounts, I eye-balled it. Season to taste. Dice the onion and sautee it in the peanut oil. You can use another kind of oil, but stick to stuff that's good for high temperatures. When the onion is tender, add the beef and then the wine, Worcestershire, and soy. Add the spices and let it come to a boil. Add the tomato sauce, stir, and lower the heat. Simmer for twenty minutes, stirring occasionally, and then let cool for a little while. Add the cream, stir, and enjoy over brown rice or whatever else you like. (A full pint of cream might be a tad too much, so stir in the creme a bit at a time if you want to use less - I only added to my own portion, so a quarter cup did it for me.)


According to my "My Fitness Pal" quote, this dinner (my portion only) came to around 420 calories

Not really a recipe, but here's a healthy snack that's great for after a workout.

Frozen Grapes

Take your favorite grapes and place them loose, inside a freezable container.
Store in freezer until frozen through, and enjoy.

My mom compared them to Italian ice in texture, try it! smile


Edit: This also works great with (peeled) bananas, just be careful not to break them!
Also good for any watery berry, like blueberries. Experiment with it and post your results. 4laugh

On a whim, I just tried something crazy.
One pomegranate (meaning the seeds from one pomegranate, of course)
and a cup of pomegranate kefir.

MyFitnessPal says that the two together make 245 calories, and I have a nice little cereal of sorts.
