Alright, Here I'm going to List each of my Pokemon.
And all of the Moves they Know, and a short Explanation for Each.
Sugestions would be Nice.

just to let you know, I'm a Head-On Battler.

Pokemon 1:
Matsumoto/Espeon
---------------------
Psybeam- I figure this is a Basic Psychic Move, Which I use to Make-up for Psychic Having somewhat Low PP, Also is good for Elite four Battles, Where I can't KO the enemies Pokemon in One-hit with Psychic. Using Psybeam will help avoid triggering Full Restore Uses.
Psychic- Definitely a Must-have for Any Psychic Pokemon,
Quick Attack- This is definitely one I'm willing to get Rid Of. It's Pretty common among EeveeLutions, And Generally Useless for a Pokemon at It's Level.
Bite- I figure this will be Useful in Battles Against Ghost Pokemon.
But Most of the Ghost Pokemon you battle in FireRed are Part Poison, So Psychic works just as Well.

Pokemon 2:
Hideki/Umbreon
---------------------
Rest-this move is PERFECT for Umbreon. Because Umbreon has Such a High Defense/Special Defense, And a Very Decent Amount of hp, Rest Can just about Ensure That Umbreon will Last through any Battle.
Bite- Bite works well for Umbreon, Due to the STAB bonus it Gets, and the BlackGlasses Umbreon has Equipped at all Times.
Shadow Ball- This is a Somewhat Good Move, Works better than Bite Against Psychic Pokemon, because Psychic Pokemon tend to have a Low Defence Stat.
Quick Attack- Once again, a Move i'd Like to get rid Of, As Umbreon's Low attack Stat Doesn't Help it at All.

Pokemon 3:
Yamashita/Flareon
---------------------
Flamethrower- of Course, must-Have for any Fire Pokemon.
Double-Edge- Most people wouldn't COnsider Using this move, but FLareon has an AMAZING attack Stat (Going on 300), Derspite the Fact that it is a Fire Type. I've Knocked out Lvl.85 Blisseys in One Hit with This.
(Although the Recoil caused Flareon to Faint. >.<)
Fire Blast- This is more of a Last Resort Move, Which I don't Plan to use too much, but would Like to Have.
Bite- This move should be Replaced with Quick Attack, But I accidently Deleted Quick Attack, Because I was Pretty confident that Flareon could Learn Aeriel Ace..Needless to Say, He couldn't. I can either Go to the mushroom Guy to Fix this, Or Find a new Move to Replace it With.


Pokemon 4:
Yuuga/Vaporeon
---------------------
Vaporeon is Kind of Weird, Because I somehow ended up with Him only knowing Water/Ice type Moves. So I'm Looking for a Move I can use to Replace at least one of Them.
Waterfall If I am to Replace any of the Moves, This would Probably be the One.
Surf This one is a Definate, for Out-Of-Battle Needs, and It's a Decent Enough Move.
Hydro Pump I have this for the Same Reaosn Flareon has FireBlast.
Ice Beam This is also a Good Move for Vaporeon to Know, because None of my Other pokemon Know anything that is Super-Effective against Dragons.


Pokemon 5:
Ichiro/Jolteon
--------------------
Thunderbolt- Jolteon's basic Move.
Thunder Same reason as Flareon/Vaporeon
Bite- I figure this'll be Alright to Keep, As it will have Normal-Effectiveness against any Rock-Types i should Encounter.
Quick Attack Okay. Jolteon definitely doesn't need this, Due to His Exceptional Speed.


Pokemon 6:
Matsui/Skarmory

I don't ever Use Skarmory, so the Moves don't Matter as Much.

I have a huge suggestion. You noted Flareon's Attack Power? Get rid of Fire Blast, use a Heart Scale, and teach the thing Fire Fang. It's a physical type attack, which caters to it's Attack power, and it gets a STAB. The Power Points are higher too, and if you're faster than your target you could Flinch them.

@ Umbreon: Dump Quick Attack for Last Resort. Maybe even consider dumping Flareon's Double Edge for Last Resort.

@ Espeon: Get rid of QA for Shadow Ball if you can. Shadow Ball is a Special Attack so it'll do more damage.

@ Vaporeon: Actually, if you want Vaporeon to stay fresh longer, teach it Aqua Ring. I also taught mine Iron Tail (I know about Vaporeon's low physical strength kthnx), which helps against Ice types, but there's a lack of those in the Elite Four specifically...

@ Jolteon: Hm, no clue with that one. Thunderwave might be a bit useless to you at this point, but mine knows Toxic...

o.o... I didn't even know Jolteon could learn Toxic...

Eh, but anyways... i reckon other options you could go with for quick attack is "Helping hand" ... that is just epic in double battles (-remembers that time a Eevee trainer showed him the true power of helping hand cry -)

I'm Also Debating Re-Teaching my Jolteon Pin-Missile,
Since it's a Bug Move, and bug is Super-Effective against Dark. Which is one of the Types of Pokemon that I can't hit Super-effective against.
The Other being electric.
To solve that, I might Switch my Skarmory for an Aerodactyl, since it Can Learn Earthquake.

As far as I know, that should cover all types of Pokemon, Not Including Dual-Type Pokemon.
I keep forgetting what Moves are Super-effective against Kingdra,
I'll have to check Bulbapedia Later.

Kingdra is weak to ONLY Dragon moves.

Yeah, In about a Month, My friend is going to Get a New Ds, and He'll give me his old One.
I'll probably Get Platinum Around that Time.

Only Dragon?
Bummer.
But since I'm going to make a Second Team one of these Days, And I so Happen to have a Kingdra, That Might Prove Useful.

I'm sure it wasn't breeding, because only Flareon could learn it, and if it was breeding, every Eevee evolution would have had the potential to know it...
