But most Anime's don't have bf gf's, because the ratings will go down. Unless the story revolves around their love and blah blah blah.

You're probably right, If Amuto fans find out the Amu goes with Tadase the ratings will go down because then the Amuto fans will probably not want to watch the anime anymore.
If the Tadamu fans find out that she ends up with Ikuto, then the ratings will go down still because beleive it or not, there are a lot of Tadamu fans.
So to keep the ratings even, the company/writers will have the person either fall in love right at the end of the series or just have them be friends with the two people.
