gah...i woldn't be able to rate them into top 10 but here are my note worthy's this list is in no particular order
neon genesis evangellion
desert punk
ghost in the shell (most of it)
karas
elfen lied
full metal alchemist (>_> if you can find a box set with volume 5)
final fantasy 7: last order
saiyuki (both series)
trigun
the dragon ball series (Japanese uncut version)

Huhuh... they are not in any particular order since it's so hard to decide... so here goes:
1. Neon Genesis Evangelion ( What can I say, it's a classic! )
2. Noir ( Another classic =D )
3. Geneshaft ( It's pretty good )
4. Clannad ( The detail KEY puts into their stories is amazing )
5. Desert Punk ( Man, I need to find the second season )
6. Trigun ( "Love and peace! Love and peace!" )
7. Higurashi no Naku Koro ni ( When I first got it, I wasn't expecting... xD )
8. Druaga no Tou ( Just because it kinda reminds me of Fate/stay night )
9. Touhou series ( It's not official but I love it all the same )
10. Baccano! ( It's funny, interesting, gory... well-rounded. Awesome )

I'd like to mention a few movies as well:
Stranger - Mukoh Hadan (Sword of the Stranger), Nausicaä of the Valley of the Wind (well, ALL of Miyazaki's works are incredibly good), Akira (yup, it's a classic!), Apple Seed
