I'm having a hard time painting things to look like they have just a shimmer of colour to them, without making it look like a retarded rainbow.
Any specific techniques for this?

What about adding just a touch of pearlescent powder to your paints? Of course the medium would determine that...
Another method (again dependant on what type of paints) is doing the Bob Ross way and doing just a bit of 'blurring" and "misting" behind what you're painting... Softening the background just a touch so the object stands out and seems to put off a faint glow...
