This recipe's not vegan at all, but it's vegetarian and provides a lot of energy. It's not terribly healthy, but I like making and eating it for the caloric value. Great on cold days for keeping warm! (=
BAAGAA'S CHEESY POTATO CASSEROLE
* 2 baking potatoes, shredded or cut into very small/thin pieces
* 2 tablespoons butter, melted
* 1 cup shredded cheddar cheese (divided in half)
* 1 tablespoon minced onion
* 1 teaspoon salt
* 1 teaspoon paprika
* 2 eggs, beaten
* 1/2 cup milk
1. Grease a 1.5 liter/quart casserole dish. Preheat the oven to 375 degrees F.
2. In a large bowl, mix together potatoes, butter, half of the cheese (1/2 cup), onion, salt, paprika, and eggs until the mixture is well combined.
3. Spoon/poor mixture into casserole dish and pour milk over the top.
4. Bake for 40 mins.
5. Sprinkle rest of cheese over the top of the casserole and bake for another 15 mins or until the cheese is melted or a little crispy.
6. Enjoy!
