Wintery Clam Chowder

I know clams seem weird at first, but they taste good!

Ingredients:
3 tbs butter
2 onions, diced small
1 celery stalk, diced small
3 tbs flour
4 cups (1 L) Fish stock, heated
3 potatoes, peeled and diced small
1/4 cup heavy cream
5oz can baby clams
juice from clams
salt and pepper
pinch celery seeds
pinch thyme
dash paprika
dash ginger

Directions:

Melt butter in large sauce pan. Add onions and celery; cover and cook for 2 min. over medium heat.

Mix in flour until well incorporated. Cook 3 min, uncovered, over low heat.

Pour in fish stock and juice from clams; season and mix well. Add all seasonings and bring to a boil.

Stir in potatoes, bring to boil again and reduce heat to medium. Cook 20-25 min. uncovered stirring frequently.

Pour in cream and add clams too soup. Mix and cook for 4 min. over low heat. Do not allow liquid to boil.
