Caramalized Shrimp

You might think.. Eww! But wait and try it. I loved it.

But anyways. I was once put in charge to cater too .. well to say it bluntly, rich folk. They had what they wanted but I was given the freedom to create one more snack/appetizer to compliment the batch. Though I was stuck with one ingredient. The Shrimp. I find them very versatile, and took this moment to experiment and I would recommend it to anyone.

What you need:
Stainless steel bowl (the type you can put in the oven}
Baking sheet
Tongs (long pinchers, preferably metal)
Small knife
Spoon
Preheated oven about 200°C – 230°C

Ingredients:
Large Shrimps uncooked and deveined (as a starter, 2 maybe 3 shrimp per person)
Sunflower oil, (or a flavourless oil)
4 Vanilla pods (or cinnamon sticks + cinnamon powder) 6 pods for about half a kilo (cinnamon works splendidly here and is cheaper)
Sugar

What to do:
1.) First you prepare the vanilla pods, by splitting them in half (use a small knife for safety) then using the knife scrape the innards into the stainless steel bowl. Place the pods in the bowl as well.
2.) Place the shrimp in the vanilla innards and pod and mix so that it somewhat coats. Pour in the oil till it is covering the shrimp. Again mix well.
3.) Place the bowl in the preheated oven and cook for 3 minutes (No more!) Don’t worry about some that may uncooked.
4.) Have the baking sheet prepared, sprinkle a layer of sugar on the surface.
5.) Once you take the shrimps out of the oven, increase the heat between 230°C – 250°C.
6.) Take the shrimps out of the oil (It is hot! so use the tong / pinchers!) and accordingly place the shrimp on the baking sheet so that they are not touching them.
7.) Save the vanilla oil, it is great with fish and or cake-like desserts or your imagination for it.)
8.) Sprinkle sugar over the shrimp, make sure it is coated on all sides and through in the pods on .
9.) Place it back in the oven for about 3 – 5 minutes, till the sugar has caramelized and that the shrimp is fully cooked.

TIP: If you wish to make it look good, use the now dried pods as sticks, and pierce 2 to 3 shrimps on each pod, place it on a rectangle plate and drizzle the vanilla or cinnamon oil in it to finish it. Serve either warm or cold.
